Christmas dinner circles back every year and the excitement it brings is tenfold. We become inundated with the shopping and decorating. That alone requires ample time to get prepared. If you host Christmas dinner or are hosting for the first time, then buckle up because these tips are for you! Guests Who will grace your Christmas dinner? Will you keep it intimate or go big? Make a list of invitees and set about inviting them. Don’t forget to take note of any dietary restrictions. Click to download the customizable guest list form below. Dinner Menu Protein Creating the dinner menu comes before the the grocery list. First, determine your main protein. I usually choose to bake a chicken or a large piece of salmon. Keep in mind, if you’re hosting an intimate dinner of six, you only need one protein. If instead, you have thirty people attending, then you need to double up on your protein or add additional options. Sides Consider cooking sides that you can prep in advance. For instance, sweet potato casserole can be boiled, mashed, prepped and refrigerated about a day or two in advance. The rule of thumb, aka my rule, is to choose sides that compliment your protein. If baked salmon or chicken is on the menu, then mashed potatoes is a must. I would add corn casserole because why wouldn’t you? Snap your fingers and it’s done! Plus you can prep this in advance as well. My vegetarian stuffed mushrooms are light, delicious and will be the avant-garde offering at the dinner table. Add a rice dish to balance the richness of the potatoes and the savory flavor of the mushrooms. Black rice adds a nice touch and is a healthier option. Not only is it tasty, it has many health benefits such as fiber, antioxidants, iron, copper, zinc, vitamin E and it’s gluten free! If black rice isn’t an option because it does take about an hour to prepare, then wild rice can be cooked in under twenty minutes. Finish choosing the main dishes of Christmas dinner by adding a green side dish. A nice salad, steamed veggies or roasted brussel sprouts. Don’t forget the gravy . Trust me, your guests will thank you for this delectable dinner. Dessert You can bake a pound cake, a pie in advance or support local bakers. The Easiest Romaine Lettuce Wraps Topped With Guacamole
Romaine lettuce wraps are an easy, healthy way to simplify lunch or dinner prep. And who doesn’t need easy in this hectic world we reside? Say goodbye to overcomplicated meals that can only be prepared by a cuisinier or head chef. Whether you’re a seasoned or newbie cook, this recipe is for you! Step 1: Gather Your Ingredients Ingredients 2-4 large romaine lettuce leaves 1/2 lb. ground meat or black beans (vegetarian option) 1/2 cup slivered/sliced almonds 1-2 cups of mushrooms (sautéd) 1 tbsp. butter/olive oil Pinch of salt/black pepper Goya seasoning 1 yellow onion chopped Sprig of fresh rosemary/1/2 tsp. dried rosemary 5 large basil leaves 2 sprigs of thyme or 1/2 tsp. dried thyme Step 2: Cook The Meat! Heat the oil on medium high temperature. If you’re using butter, be mindful that butter burns easily so heat it on medium to low heat. Sauté the onions for 1-2 minutes. Then add the ground meat or beans. Add the rosemary, basil, thyme, salt and a pinch of Goya seasoning. Cook for about 10-13 minutes or until desired doneness has been reached. Step 3: For The Guac 2 hass avocados 1/2 an onion chopped 1 tbsp. olive oil 1/2 of a lime (juiced) Hot pepper (optional) 1/2 cup chopped cilantro Salt to taste Step 4: Making The Good Good Guac Start by removing the skin and seeds of the avocados. Add the onions, pepper, cilantro, lime juice, olive oil and salt to taste. Mash vigorously and combine! Step 5: Layer Your Wrap Wash the lettuce leaves. Dry with paper towels or with your salad spinner. First add your meat or black beans. Then add guacamole, mushrooms and almonds. *Optional: add bell peppers and top with parmesan.

Looking to jazz up thanksgiving or Christmas dinner? Well you’ve got to try this one. It’s tangy, it’s sweet, it savory and a perfect addition to turkey, chicken or sides. This was my first time making chutney and I was surprised at the simplicity of preparing. Whether you like your chutney spicy, no spice or somewhere in between, you can customize this pear cran chutney recipe to suit your taste. If you’re a beginner cook or a seasoned cook, this is for you! Ingredients 5-6 pears (pealed and chopped) 12 oz bag cranberries Half lemon sliced thinly with rind Half yellow onion chopped 3 cloves garlic minced/blended 1 tbsp. ground turmeric 1 tbsp. Butter/olive oil 1 1/4 cup brown sugar 1 tsp. ground cloves 1 tsp. ground all spice 1 cinnamon stick 1 tsp. ground cumin 1 tsp. cardamom Pinch of salt 8 hot peppers (optional) 1/4 cup white wine vinegar How To Prepare Pear Cranberry Chutney Step 1– Sauté onion, garlic, ginger for about 3 minutes. Then add the pears, cranberries and cinnamon. Step 2– Add all the other ingredients. Bring to boil. Then reduce to a simmer . Step 3- Simmer for 45 minutes covered, turning ever so often. Step 4– Simmer for another 10 minutes uncovered. You can add a heaping tbsp. of corn starch to thicken the consistency further if you like. Remove from heat and store in a sterilized bottle. Enjoy at thanksgiving instead of regular cranberry sauce or in addition to it! 🍁🦃🍂👏

Stuffed mushrooms are juicy, succulent and absolutely delectable! It’s usually a crowd pleaser and a great addition to your hors d’oeuvres. Whether you’re planning a dinner party, a holiday get together, Thanksgiving dinner or a Christmas celebration, stuffed mushrooms add a touch of class to your presentation and an explosion of flavor to your tastebuds! Ingredients 1 pk whole mushrooms (15-20 count) 1 tbsp. vegetable oil 2 tablespoon blended garlic, onion, cilantro, rosemary ¼ cup grated Parmesan cheese 1/2 cup cheddar cheese Cheddar cheese for topping 1/2 cup bread crumbs Salt and Pepper to taste (optional: hot pepper) 1 tsp. Goya seasoning How To Make Stuffed Mushrooms 1. Preheat your oven to 350 degrees. Get your baking sheet ready by greasing and setting it aside. Start by removing the stems and chopping them thinly. 2. Heat oil to medium-high heat. Add blended garlic, onion, cilantro and rosemary and sauté for 1 minute. 3. Next, add the chopped stems, salt and pepper to taste and Goya seasoning. Sauté for 1-2 minutes before lowering the temperature to medium-low and adding bread crumbs, parmesan cheese and cheddar cheese. Cook for another 2 minutes or until the ingredients have melded well. 4. Once you’ve turned off the stove and removed your stuffing mix from the stove, use a spoon to scoop the mixture into each mushroom cap. Fill the caps all the way to the top and sprinkle the rest of the cheese to top it off. 5. Arrange on the cookie sheet and bake for 20 minutes or until the cheese has melted and your mushrooms are golden. Enjoy!!
Easy Corn Casserole Recipe
This corn casserole recipe is literally as easy as pie. You can shut your eyes and put it together in a jiffy (or with a jiffy)! As I’m writing this, the holidays are almost upon us and corn casserole is a great dish to include on your menu for Thanksgiving, Christmas or a dinner party. Corn casserole makes an excellent side dish and is certainly a crowd pleaser! You can prep the mixture and store it in the fridge until you need to bake it. How To Make Corn Casserole: Ingredients 1 can whole kernel corn (drained) 1 can creamed corn 1 cup sour cream 1 cup sharp cheddar cheese (preferably grated off the block) 3-4 tbsp. butter (melted) 1 box Jiffy corn muffin mix Instructions Preheat oven to 400℉. Grease pan and set aside. Half of my crowd likes their corn casserole baked thin and the other half likes it thicker, so keep that in mind when spooning your corn casserole in the pan later. In a large mixing bowl, combine drained corn, creamed corn, sour cream, cheese, melted butter and jiffy corn muffin mix. Spoon your mixture in the greased pan to your desired thickness and bake for 40-50 minutes uncovered. I like to broil mine for a few minutes in the end. The Most Delicious Wild Rice Recipe
Wild rice, true to its name is an exotic, distinctive amalgamation of texture, ingredients and depth of flavor. Wild rice is an excellent side dish for a party, dinner, Thanksgiving and/or Christmas menu. This wild rice recipe has been a staple of my thanksgiving dinner for a few years and is usually quite a hit. If you want to cut down the cook time you can soak your wild rice for 2-3 hours in water. Then your simmer time will be 20-25 minutes instead of 40-45 minutes. In addition to wild rice being a tasty dish, here are some nutritional reasons for consuming wild rice, “Wild rice is a wonderfully balanced food source, providing a healthy mix of protein and fiber. What’s more, it’s also relatively low in calories. One micronutrient abundant in wild rice is Manganese. Manganese is an antioxidant, and plays a role in keeping the mitochondria in your cells healthy. Manganese has also been shown to play a role in maintaining a healthy metabolism.” Your guests will compliment your wild rice for its unique nutty flavor and authentic burst of flavors. How To Make Wild Rice Ingredients 2 cups wild rice 1 tbsp. olive oil 4 1/2 cups of water or stock 1/4 cup dried cranberries 1/4 cup slivered almonds 1/4 cup walnuts blended seasoning (1 onion, 3 cloves garlic, sprig of rosemary and thyme) 1/4 cup cilantro Goya seasoning Salt and pepper Instructions Bring olive oil to medium-high heat, then add 2 tablespoons of the seasoning blend. Sauté for 1-2 minutes. Wash and drain the wild rice before adding it to the pan. Give it a good mix after adding a pinch of Goya seasoning, salt and pepper to taste and cilantro. Next add the water or stock. Bring to a boil, then lower to a simmer. Simmer for 40-45 minutes, stirring occasionally. After the rice has simmered, add the cranberries, almonds and walnuts. Who doesn’t love gravy over meat and potatoes? That luscious depth of flavor that pushes your meal to a next level experience. Now that the holidays are knocking on our doors, we’re busy compiling our Thanksgiving and Christmas menus to provide a scrumptious feast. This gravy recipe is only 15 minutes until you and the family are able to dig in and enjoy! Here is a flavorful recipe for preparing gravy: Ingredients -3 tbsp. butter/fat from chicken or turkey -1 cup chicken/turkey drippings -Sprig of thyme -Sprig of rosemary -Few leaves sage -1 cup of chicken/turkey stock -Salt and pepper to taste How To Prepare Heat butter over medium heat until it begins to sizzle or separate the fat from the drippings and use that instead. Using the fat will create such a masterpiece of a meal, you’ll use it every time! Add flour and whisk until it becomes golden. Next add the drippings. If you were able to render more than a cup, use that to replace the stock since the drippings are filled with flavor. Bring to a boil and bring to a simmer until the gravy starts to thicken. Add the fresh herbs salt and pepper and if you need to use stock, add it. Continue to simmer for 5-7 more minutes checking the consistency and thickness. Remove from heat, once the desired thickness has been reached. Use an immersion blender to blend the herbs in the gravy or strain it if you like it smoother. Enjoy! What’s better than the pride of having fresh, wholesome herbs straight from your herb garden? Yes, you can buy herbs. Instead of buying herbs that most certainly come with an expiration date, an herb garden will add depth of flavor, essential nutrition to our diet and such pride that you successfully grew your very first herb garden. I would never have known that I would become such an avid gardener. Years ago, you couldn’t put my hands in soil and now I refuse to take it out! As someone who’s a huge proponent of preparing nutritious foods at home, my herb garden has added such spice to my life literally! Few things to consider when starting your herb garden are: Where-Location, location, location Where do you plan to plant your herbs? Will the location be on your balcony, by the kitchen window, in the yard, in pots or will you be constructing a raised bed? Check out this tutorial on constructing a raised bed for free from recycled materials: Your location is noteworthy since you may or may not have planting restrictions based on space, environment, climate and lighting. Lighting is especially pivotal to grow lush, full herbs. My raised garden box gets 6-8 hours of sun. If you live in an apartment you may need to plant a kitchen herb garden. Which- Starter Herbs Start your garden with hardier plants. Like thyme, basil, rosemary, parsley and mint. These herbs are every new gardener’s dream. A few pro tips; mint can get invasive if it’s not in a confined space and thyme does really well in pots. How Many-Audacious Herb Garden Goals When visiting the local Home Depot or garden center, the experience can easily become overwhelming, confusing and exciting. I’m not suggesting that you can’t accomplish your big, hairy, audacious garden goals. The truth is, there is a learning curve and gardening is a skill that is learned and developed overtime. For your first herb garden, start with a small manageable garden that can be nurtured well. Caring for a small herb garden will help in making the right decisions and learning at a practical pace. Remember, planting is only the beginning. Plants require lots attention so be cognizant of that truth. Here are some herbs you may want to have in duplicates: -Basil -Rosemary -Culantro -Scallions How To Care For Herbs- Soil and Fertilizer Needless to say, top soil alone isn’t sufficient. Just as you need sustenance so do your herbs. If your herb garden will reside in a box or pots you’ll need potting soil. Consider this when choosing soil, “Good soil, whether you’re talking about potting mix (used in containers) or garden soil (used in planting beds), is crucial for strong roots. Just like a plant’s leaves need the right growing conditions, roots also need certain things in order to thrive. In an ideal rooting environment, your growing medium needs a good balance of three ingredients: water + nutrients (plant food) + air = rich growing environment” This 1 cubic feet Miracle Gro potting soil from Home Depot is under $10. For in the ground planting, use Miracle Gro’s garden soil. 1.5 cubic feet of this soil is under $9. My personal fertilizer of choice is Osmocote. I’ve had a higher success rate with Osmocote than any other fertilizer. This flower and vegetable smart release fertilizer will keep your herbs fed for up to 4 months!
